Emmer monococcus, also known as small emmer, is the progenitor of all cereals, today it is rarely cultivated due to its poor agronomic yield. However, we have chosen to produce it because we consider it a valid complement of excellence to our EVO: together they are the basis of the Mediterranean diet. We produce a limited quantity which is partially sold in 500 gram packs, and partlially transformed into flour and pasta.

These products have a high protein and trace elements content (phosphorus, zinc, magnesium, potassium), are very rich in antioxidants, while the presence of saturated fat acid is low and gluten does not exceed 7%. The pasta, with a delicate and pleasant taste, goes well with any type of sauce.
