The olive trees grove

Located in the little municipal district named Vocabolo Sant’Ansano, 370 meters above the sea level, is mainly exposed to the south-east and planted on a stony ground of marine pebbles, that facilitates the drainage of rainwater while maintaining a constant level of moisture at the roots of the trees throughout the year. The very large planting system layout guarantees distance between trees, ence ventilation and lighting for the plants. Pruning is carried out accordingly the Umbrian tradition (namely, “potatura a vaso policonico”), ensures that the olive trees grow harmoniously; it is carried out every year in order to reduce the quantity of olives in favor of the quality of the oil. Our groves are made up of Moraiolo, Leccino, Frantoio, Leccio del corno cultivars, in the percentages established by the DOP Umbria – Colli Orvietani Production Regulation (so called “disciplinare di produzione”).

DOP Umbria – Colli Orvietani

The “Volpe di Santosano” oil is produced from early harvested olives (usually, half of October), pressed daily at low temperature in order to get an oil of very high quality quality DOP – Protected Designation of Origin – certified. The color vary from green to yellow-green and a is velvety on the palate; on the nose it recalls the mellow olives, freshly cut grass and unripe tomatoes. The taste is medium fruity, with a bitterness that recalls that of artichoke and thistle. The slight spiciness that it leaves in the throat is an indication of high quality, due to the high presence of polyphenols , fundamental natural antioxidants. Oil is a natural product, subject to seasonal changes: each crop has its own characteristics. The oil “Volpe di Santosano” is a guarantee of high quality and high nutritional value, advised for consumption in early childhood (weaning) and in old age as an antioxidant, a nutraceutical metabolic and as a prevention for cardio-vascular diseases.
